For all you chocolate lovers, this is a
well-known, super easy, cake.
While working with FSD Donna Young, R.D. in
Sioux City, Iowa, I tasted a chocolate cake that was wonderfully moist and
delicious. Upon investigation, I discovered that the recipe calls for
cherry pie filling instead of liquid of any kind. That's right, the recipe
is correct, and it is a "no brainer". In fact, my daughter makes
another version with spice cake mix and apple pie filling. It has a cream
cheese frosting and is also delicious. I would definitely serve both cakes
in your cafeterias.
The source of this cake recipe was Bobby Jo
Lupkes at an Elks Lodge someplace. However, I am told that it is a well
known recipe that has been around for a long time. I guess I've been
living on another planet or something.

Chocolate-Cherry Cake with
fudge frosting
Portions Size: 3” x 3”
Servings

Pan Size 9 x 13 1 sheet pan
Ingredients
Cake
Devils Food Cake Mix
1 box 1 5 lb. box
Cherry Pie Filling
1 - 21 oz. can 1/3 of
#10 can
Almond Extract
1 T. 2 T.
Eggs, Beaten
2 ea. 6 ea.
Frosting
Sugar
¾ c. 3 c.
Butter
3 T. ¾ c.
Milk
¼ c. ½ c.
Chocolate Chips
¾ c. 3 c.
Directions:
Cake:
1. Combine cake mix, cherry pie filling,
eggs and almond extract in bowl. Mix well.
2. Pour into greased pan.
3. Bake at 350°F for 25-30 minutes.
Cool, then frost.
Frosting:
1. Combine sugar, milk and butter in pan.
Boil for 1 minute.
2. Remove from heat and stir in chocolate
chips.
3. Beat by hand until it starts to
thicken. Spread on cake.

Apple Spice Cake with cream cheese frosting

Confectioners Sugar, Sifted
3 ¾ c.
11 c.
Vanilla Extract
1 tsp.
3 tsp.
Directions:
Cake:

Combine
cake mix, pie filling and beaten eggs.
Beat until well combined.

Pour
into greased pan. Bake at
350°F
for 25-30 minutes. Cool,
then frost.
Frosting:
-
Place
the cream cheese and butter in a mixing bowl. Blend on low speed until combined. Stop the machine and add the confectioners sugar, a
little at a time, blending until creamy and smooth. Add the vanilla and blend.
Frost cake.
