Lakeland Regional Medical Center is located in Lakeland, Florida. In 2005, DM&A, Inc. was hired to take over the process of opening their new multimillion dollar state-of-the-art cafe. The first two design companies didn’t work out. DM&A was the third design/operations consulting firm involved. DM&A’s job was to finish the project, open on time, and then crate a best practice hospital café in all areas such as menus, recipes, concepts, training, food quality, service, etc.
RESULTS – The project opened on time. All glitches were resolved or worked around. Hospital café sales increased 300% over previous café sales to $5 million per year. The $1.5 million café subsidy changed to a $.5 million net income. Yet, an average meal is only $5. Lakeland’s mayor calls it the best restaurant in town.
